Tapioca pudding, or sago pudding, is a sweet pudding made with tapioca and either milk or cream. It can be made from scratch using tapioca flakes, meal, sticks, or pearls. Packaged mixes are also available. Tapioca is made from the starchy roots of the shrubby manioc plant (cassava) grown in Brazil and other tropical locations.
Known as “Pudim de Tapioca” in Brazil, tapioca pudding originated in the northeastern region of the country and is traditionally made with tapioca pearls, coconut milk, and sweetened condensed milk and was often flavored with vanilla or cinnamon. Over time, it has evolved and become a popular dessert in many countries, including Nepal and India.
