The slightly-spicy, sweet cookie known as the Gingersnap is celebrated July 1. Derived from the German word snappen, meaning "to seize quickly," gingersnaps have been baked commercially since the 1860s and are also known as ginger nuts or ginger biscuits. Most recipes call for molasses, cloves, ginger, cinnamon, and brown sugar.
