Dark Chocolate Day

Yet another chocolate food holiday occurs February 1, this time extolling the health and mood enhancing benefits of dark chocolate. The darkness of chocolate is determined by the proportion of cocoa solids made from cocoa beans in the mixture with cocoa butter and sugar. The higher the percentage, the greater the percentage of cocoa solids the darker the chocolate. Dark chocolate is classified as 50-90% cocoa solids, whereas milk chocolate is 10-50%.
