Named after the Italian city of the same name, Bologna has been particularly popular in America since the turn of the 20th century, adopted by German immigrants and spread nationwide. The processed meat can be served cold with slices of cheese and white bread or chopped up and mixed with crumbled, hard boiled eggs, mayo, and veggies in a bologna salad. In Italy, it is known as mortadella, which is a sausage with bits of lard and peppercorns.
