Celebrating one of humanity's oldest foods, Artichoke Hearts Day recognizes a plant from the sunflower family that originated in the Mediterranean. A good source of antioxidants, vitamin C, folate and magnesium, artichoke hearts are tender and sweet, complementing salads, sandwiches and baked dishes as well as eaten on their own, steamed and dipped in sauce.
