This food holiday on May 2 celebrates the chocolate confection, not the fungus.
The truffle is believed to have been invented in 1895 by Louis Dufour in Chambray, France, as he was concocting a Christmas treat. Dufour shaped ganache into a ball and dipped it into melted chocolate, creating the first truffle.
Today, truffles are made in many shapes and with differing ingredients.
