This November 9 food holiday celebrates a pork dish created in America and especially popular in the southern United States. Made from a mush of pork scraps combined with cornmeal and frequently spiced with savory, sage or thyme. Prepared in loaves, it is sliced and then fried. Among the Pennsylvania Dutch, it is known as pon haus.
