This food holiday celebrates a dessert with sweet cream cheese layered beneath a sweet-tart raspberry topping, all tucked into a pie shell or crust.
The first of August timing is no accident, as this is the time of year when fresh raspberries are most abundant.
Raspberry cream pies have been made since at least the 1880s in England, when the first known recipe for the dessert was published in a cookbook by James Clarke called “Tasty Dishes.”
Made with heavy cream, sugar, vanilla and, of course, raspberries, these pies can be made readily at home.
