A favorite South India breakfast staple, the steamed savory rice cake known as idli originated in Gujarat or perhaps Indonesia. A Chennai man locally regarded as the “Idli King” and the president of Tamil Nadu Catering Employees Union collaborated on creating this special day dedicated to the steamy delectable. Idli is made by steaming a batter consisting of rice and fermented black lentils.
