This food holiday recognizes traditional animal fats like beef tallow, duck fat, goose fat, and pure lard that have long been maligned but are now recognized as an important part of a healthy diet. Unlike artificial trans fats, these fats are a vastly superior alternative for baking, frying and cooking to the heavily processed, industrially produced alternatives.
