Chocolate Parfait Day

In addition to the joys of spring, May Day is a good day to celebrate the sweet layers of chocolate, cream, and more chocolate that make up this exquisite dessert. The parfait, which means "perfect" in French, originated in France during the 19th century as a frozen dessert made from sugar syrup, egg, and cream. The oldest known recipe for a chocolate parfait dates back to 1869 in a French cookbook. In the USA, most chocolate parfaits are made with ice cream layered on chocolate syrup along with whipped cream and liqueurs.
